This oil, produced in only a limited number of bottles each year, embodies the deep earthiness, rich polyphenols, and exquisite bitterness. Like wine, it delivers a complex flavor created by the tree's age.

we harvest unique Sicilian olive varieties (such as Nocellara and Biancolilla).
