What grapes is it made from?


Traditional balsamic vinegars differ from grape variety to grape variety.

Leonardi Black Balsamic Vinegar is made from a combination of two grapes:


Trebbiano – A bright yellow-green grape, it offers refreshing and balanced acidity.


Lambrusco – A deep purple to red grape, it adds a deep, rich sweetness.

These two grapes are harvested, their skins and seeds are boiled together, and then aged for a long time in oak barrels.

This naturally develops its dark color, intense aroma, and smooth consistency.


📌 In other words, Black Balsamic is made not only from purple grapes, but also from a blend of green grapes.

The color is not derived from the grape color, but rather from the boiling and aging process.

It is the essence of balsamic vinegar, crafted with care and time, following centuries-old traditions in Modena, Italy.


① Grape Harvest


We hand-harvest Trebbiano (green grapes) and Lambrusco (purple grapes) grown in the sun-drenched Modena region of Italy.

Only fresh grapes with natural sweetness are selected.


② Grape Steeping


The harvested grapes are pressed to extract the juice, which is then slowly boiled in copper pots.

This process creates a concentrated grape juice (must) that infuses it with a deep, sweet aroma.


③ Natural Fermentation and Oxidation


The boiled grape juice is placed in large wooden barrels for natural fermentation.

Slow exposure to air allows for a harmonious development of acidity and flavor.


④ Oak Barrel Aging


The balsamic vinegar is then gradually transferred to several oak barrels of varying sizes and aged for several years. Over time, the color deepens and a smooth, rich flavor develops.


This process is called the "Solera Method."


⑤ Bottling and Finishing


The fully aged balsamic vinegar is bottled in thick, elegant glass bottles and delivered to your table.

It's made solely with grapes, time, and the hands of artisans, without any artificial additives.
